Totally Random Goodbye (For Now)

I've had difficulties posting pictures lately. I think it's my Picasa program. I thought I would give a random update before I say goodbye to the blogging world for a while. We will no longer have the internet for at least a few months. Maybe lots of months. Time will tell. So this may be my last post for a long while.

We had a nice Christmas break with Mark's family. We went sledding/snowmobiling. Lexi got to go caroling which she was anxious to do. She got to shake jingle bells and thought that was wonderful. Mark's little brother got engaged on 1/1/11 at 1:11am. That was pretty exciting!!
The kids had lots of play time with their cousins. I think it was good for Isaac to hang out with boys. He definitely has a big sister. Sometimes he dances around pretending he is a butterfly. Now, he's pretending to be a superhero too. He doesn't have a cape so he puts his coat hood on his head and "flies" around.
Kari got to play the part of baby Jesus in our reenactment of the Christmas story. She recently had her 2 month appointment and weighed 13 lbs 8 oz and was 23 3/4". She's a growing girl! She has just started really smiling. I LOVE it! It makes me feel incredibly good to see her smile!

I was called to be a ward organist in our ward... I don't play the organ. I did take a beginning organ class at BYU-Idaho but it was over 6 years ago! Last week was my first week playing in sacrament meeting. Other than really dragging most of the time and totally slaughtering the sacrament hymn, it went pretty well. Luckily, there is a cheater button so I don't have to play the foot pedals. Maybe someday I'll get brave enough to try them but that someday is a long way off. I will play for the rest of January and then I think I'll switch every other month with the other organist.

I'm actually surprisingly glad to take an internet break. I waste way too much time on facebook and reading blogs. I find myself comparing myself to others too often and getting discouraged by all the things I don't do and how I'm just not good enough. I think my hormones are still a little crazy and I'm still getting used to juggling three kids.
One down side of not having the internet is that I'm going back to pencil and paper 100% for my budget. I've been using Mint.com to keep track of money but it has too many issues and I was considering quitting anyway. Do any of you have a program that you LOVE for budget stuff?

One thing I really want to improve on this year is making dinner for my family. The problem is not that I'm a terrible cook it is that I just don't cook or better yet I don't know WHAT do cook. I can never figure out what to make. Then I stress over it WAY too much and then put it to the back of my mind until it's too late to really make anything. At this point I see 4 options 1- I still figure out something to make and we have dinner at 8:30! Way way too late! 2- I throw some chicken nuggets into the oven or whip up some sandwiches... 3- Have Mark make something yummy. That usually results in a super late dinner also... or 4- We grab a $5 pizza or some cheap fast food. I think that if I planned ahead and knew what I was going to make beforehand I would do SO much better. Making a menu is my only option and I keep failing...
I could really use some help. What I would LOVE LOVE LOVE are some recipes from you! Please Please! What is the meal you make most often? What meals do you take to ward members? What do your kids eat? What is cheap and easy? Anything! Don't assume that I already know how to make it. I don't care if you think it's boring. Just share. If you'd like, I will even put all the recipes I receive into one e-mail and send them to everyone that I received one from. (However, it could be a long time before I get that done since we won't have internet soon...) Please send any recipes to me at forevermommy at gmail. I would be SO grateful. (My family would be grateful too!!!) Please! I'm really begging here.

Our favorite budget tool is Quicken. We love their savings tool. However, we do love that you can download your purchases straight from the bank so it would be more time consuming without the internet. Onto recipes...do you have a grill? That is my favorite, it's 5 o'clock and I don't have anything made, meal options.

I guess you guys not having the internet will be one more reason to give you a phone call!

I still like YNAB, but Drewshka said the price has gone up.

I am a big Yoshida's chicken + broccoli over rice fan. Super great and EASY.

I would do more sandwiches, but Caleb pulls them apart and eats the middle...

Sometimes I do a noodle toss with...guess what! noodles, cream of chicken soup, then peas or corn. It's a good change from Mac&Cheese.

Pigs in a blanket or chicken crescents (I know you know that one!) are always hits 'round these parts.

Okay, now I've got my recipe binder! Beware!

Tacos. Ohhh, tacos!

Fried rice with all the fixins.

Navajo tacos (scones+refried beans+cheese+tomato+lettuce=yum), plus then I have to have a scone with honey!

I like to have the ingredients for a taco casserole on hand: tater tots (I like the half-size ones; they seem to cook easier), hamburger, corn, salsa, and taco seasoning.

I'm a tuna salad eater, but only with Albacore tuna (tastes like chicken, really!) plus some other tasty spices. I make the kids' plain, then make mine tasty.

I have a challenge for you: Let's use dry beans for at least one meal per week! Yes, I know that means we'll have to plan ahead, so all the better, right?

And, a double-dare, if you will: Let's do one meal in a crock pot every week! It could be the same meal as the beans, or not. What do you think?

One meal I make that only takes an hour is I take frozen chicken place it in a 9 x 13 pan, put one can of cream of chicken with some water , and 2 cups of rice, mix it together in another bowl, place cheese on top of the chicken put the cream of chicken, rice and water on top of the cheese and chicken. cover with tin foil over it, and place in over for an hour to an hour and a half, and eat. You can even put stuffing on top of it all with a little bit of butter drizzled over it. Or with the rice and water, put frozen veggies... I do so many different variations, and everyone that has had that loves it! And it is super easy!
